Muringa Elai (Drumstick leaves) Molagoottal
Ingredients
Serves 4 people.
Muringa elai (Drumstick leaves): 2 cups
Tuvar dal: 1/2cup
Cumin seeds: 1tsp
Coconut (Shredded/Grated) : 1 cup
Turmeric powder: 1 tsp
Salt as per taste
Urad dal: 1 tbspoon
Red chilli: 2
Coconut oil: 2 tsp
M
ustard seeds: 1 tsp
Wash two cups (thickly packed) of muringa elai (Drumstick leaves) well
2. Thoroughly strain it.
3. Next, pressure cook 1/2 cup of tuvar dal with little turmeric powder
4.Roast 1 tb spoon urad dal and 2 red chillies (medium) in 2 tsp of oil till it becomes a bit golden in color.
5. Grind this roasted mixture (after cooling down) with 1 tsp of jeera with shredded coconut. You may add very little water to make a smooth paste
6. Now mix the pressure cooked Tuvar dal and the smooth paste in a vessel and heat it up.
Just when it starts boiling, immediately add muringa elai (drumstick leaves).
it is important to take care that the drumstick leaves are not added in advance, else it will become very bitter
Add salt and boil for 1 or 2 minutes only (do not boil more than 2 minutes, as the molagoottal will taste bitter when drumstick leaves overcook.)
For Tadka: Add 1 tsp of oil in a small frying pan. Add mustard seeds. When they start spluttering add cut red chillies. Add this to the molagoottal.
Enjoy with rice. You can make side dish like thogayal, pachadi, Vendakkai puli or pickle
